My own little muffin story

So I finally got around to making some sourdough. It was fun, and showed hints of potential future deliciousness, but I am an instant-gratification type so I moved quickly on to muffins.

The humble muffin, like a cup of tea, is something that is hard to screw up.

In fact, it is so easy that Jacob Zuma could probably do it … but probably not once he is in jail, which is likely to be soon. As far as I can remember Justice Raymond Zondo said he would sign an affidavit for JZ’s arrest on October 9, which is this Friday! (Muffins for madam and a bowl of punch for the staff)

When I looked online for a muffin recipe I had to wade through thousands of words about why people baked muffins, their first muffin experience, how a muffin broke their heart and all sorts of other muffin-inspired shite, which is why I have decided to cut to the quick and let you use my muffin recipe without making you cry, or give me $5, or even sign up to my newsletter (although you can at the end of the recipe):

(I used Kelloggs’ All-Bran recipe for muffins and substituted and added some bits but please remember, of course, past performance is not a guarantee of future results.) 

Mix/soak 2 cups of bran flakes in 1 cup of buttermilk and a quarter of a cup of milk-milk until it soft (10 mins or so). Add 2 tablespoons of honey, 3 teaspoons of almond butter and one egg. Smash it up a bit with a wooden spoon (I added this for my own pleasure) and blend with a hand blender.

In a separate bowl, mix 1 and a quarter cup of flour, 1 heaped teaspoon of baking powder and half a teaspoon of salt. 

Mix dry mixture into wet. No blending here for reasons that are not clear to me (the recipe said: Simply fold dry mixture into wet)


Spray muffin pan with “Pam” (which I am guessing is the rather irresistible American name for Spray and Cook (which makes me think of the girls of Gate69 and their Lazy Susans). 

Fill to 3/4 of the way up each muffin ‘cup’/space/recess.

Bake at 200 deg C for 20-25 minutes, allow to cool for 10 mins.

Easy-peasy macaroni cheesy, quite healthy and definitely one to experiment with (blueberries next for me)
